Measuring SoC temperature with a thermocouple gives a general idea of the temperature. However the silicon temperature inside the SoC's plastic casing will be slightly higher and that's our measurement goal. The temperature sensor is incorporated inside the chip so if it works for non-LTS boards correctly setting the formulas in the firmware is the right way to go! Factory calibration is less prone to be wrong so I wouldn't loose too much time on it.
