To remove the logo, simply delete the file /boot/boot.bmp

AFAIK it may be possible to load UEFI GRUB bro u-boot, but it would probably need some work to make a working configuration for it.
You can check /boot/boot.cmd to check what it does exactly.

There is no GRUB on ARM boards.
/boot/armbianEnv.txt
Change those two parameters and reboot:
verbosity=9
console=display
