OPi PC : custom no-GUI distro or legacy and remove pkgs?

I'd like to install the latest Armbian for Orange Pi PC, but want to remove GUI / desktop packages and use CLI only.

 

I can't find any docs on how to create a tailored distro without GUI (and associated) packages.

 

So I guess an alternative is to install a standard legacy distro, then trim out the GUI (and likely other) packages as desired.

 

Any suggestions or documentation?
